Protein Pancakes Recipe
Ingredients (Serves 1-2):
50g rolled oats
1 medium banana (120g)
2 medium eggs
1 scoop (30g) vanilla protein powder
1 tsp baking powder
1/2 tsp cinnamon (optional)
50ml semi-skimmed milk (adjust for consistency)
1 tsp coconut oil (for cooking)
Instructions:
Blend oats, banana, eggs, protein powder, baking powder, and milk until smooth.
Heat a non-stick pan over medium heat and melt the coconut oil.
Pour small amounts of batter into the pan to form pancakes.
Cook for 1-2 minutes on each side until golden brown.
Serve with toppings like fresh fruit, a dollop of full-fat Greek yoghurt, or a drizzle of honey.
