Protein Pancakes Recipe

Ingredients (Serves 1-2):

  • 50g rolled oats

  • 1 medium banana (120g)

  • 2 medium eggs

  • 1 scoop (30g) vanilla protein powder

  • 1 tsp baking powder

  • 1/2 tsp cinnamon (optional)

  • 50ml semi-skimmed milk (adjust for consistency)

  • 1 tsp coconut oil (for cooking)

Instructions:

  1. Blend oats, banana, eggs, protein powder, baking powder, and milk until smooth.

  2. Heat a non-stick pan over medium heat and melt the coconut oil.

  3. Pour small amounts of batter into the pan to form pancakes.

  4. Cook for 1-2 minutes on each side until golden brown.

  5. Serve with toppings like fresh fruit, a dollop of full-fat Greek yoghurt, or a drizzle of honey.
